Just hear us out&#8230;</p><p>We&#8217;re arguing for a shift in focus: away from <strong>recipes</strong> and instead toward <strong>ingredients</strong>.</p><p>When you prioritize ingredients, you buy what looks vibrant and heavy at the market first, then decide what to do with it later. You stop forcing a winter tomato to behave like a summer one. We all know that off-season food tastes worse, but it&#8217;s also stressing out our topsoil. It&#8217;s bigger than the watery tomato taste. </p><p>We often think of the &#8220;food system&#8221; as a vast, impersonal network of industrial farms, global logistics, and grocery giants. But the truth is, the most transformative part of that entire chain happens in a space about 100 square feet in size: your kitchen!</p><p>How we choose to cook&#8212;or not cook&#8212;is the ultimate lever for change.</p><h3>Shocker: Cooking is political!</h3><p>Tired of hearing that &#8220;<em>everything is political</em>&#8221;? What can we say, welcome to the real world, babe!</p><p>Cooking isn&#8217;t just about feeding yourself or keeping up with a hobby; it&#8217;s also a political and environmental act. There is a difference between ultra-processed convenience to scratch cooking, and when we start becoming more aware of that, we aren&#8217;t just changing our dinner&#8212;we are rerouting the demand that dictates how land is used, how farmers are paid, and how much waste ends up in landfills.</p><h4>Here are three ways cooking can reshape the world:</h4><p>&#127793;<strong>Biodiversity</strong>: Industrial food relies on a handful of monocrops (corn, soy, wheat). Home cooking allows us to reintroduce seasonal &amp; diverse plants that the mass market ignores. It can also be an opportunity to eat food that helps maintain our topsoil rather than contributing to a system that is destroying it. </p><p>&#127793;<strong>Waste Mitigation</strong>: The professional and home kitchen is the frontline for upcycling. Turning &#8220;scraps&#8221; into stocks or wilting greens into pestos creates a circular economy at the micro-level.</p><p>&#127793;<strong>The Value of Labor</strong>: Cooking forces us to reckon with the time and effort required to produce nourishment, fostering a deeper respect for the entire supply chain.</p><p>&#127793;<strong>Market Change</strong>: Demand shapes industry, demand shapes policy. Industries respond to consumer habits. Companies work to fill a demand created by us. href="https://www.cnbc.com/2026/04/27/trump-supreme-court-maha-glyphosate.html">Liability Shield</a>&#8221;. And no, this was not liability for <em>farmers </em>to protect them from harmful pesticides<em>, </em>but rather for glyphosate manufacturers to have legal immunity from getting sued for illness or disease contracted from use of their products.</p><p>Bayer&#8212;a multinational pharmaceutical company that bought out Monsanto (agriculture biotech company) in 2018&#8212;is the world&#8217;s primary producer of RoundUp, a glyphosate-based herbicide. Companies like these are trying to protect themselves from lawsuits if product exposure leads to cancer and other chronic illnesses. There is now a mountain of <a href="https://pubmed.ncbi.nlm.nih.gov/41318253/">published peer-reviewed evidence</a> and jury verdicts linking glyphosate exposure to Non-Hodgkin Lymphoma.</p><p>Classic theme: elected officials putting corporate interests above our health and natural resources.</p><p>Throughout our latest podcast series, <a href="https://youtube.com/playlist?list=PLVC_McDDFKjJbC1cdoToZQftqnUXiF3i1&amp;si=PPiqHswOslxLlhF1">The Agriculture Season</a>, we&#8217;ve been emphasizing that consumers shape policy. DEMAND shapes policy. And the removal of this proposal from the Farm Bill as of Thursday, April 30th is a prime example of how that is true.</p><p>We learned something here: if we pay attention, if we educate ourselves, if we understand the power of our voice and our dollar, WE can shape policy.</p><p>Because of the public outcry from citizens like you and me, from farmers, from people who understand that the right to at least SUE for injury related to harmful products should always be upheld, the Liability Shield was removed from the pending legislation. This is a big deal, and an invitation to continue the conscious participation in policy shaping as we fight for a better, healthier, and more just food system. One that doesn&#8217;t exploit the land, cause climate change, limit access to nutrition to low-income and BIPOC communities, one that doesn&#8217;t punish the farmers that work so hard every day to feed the planet.</p><p>This is a small win in a large and ongoing battle, but KEEP IT UP. But <strong>who</strong> has the ultimate say of which products stock the shelves? </p><p>YOU.</p><p>Consumer engagement and acquisition is what every business is vying for. We see that in the proliferation of targeted ads, fueled by our very own consumer data. This arrangement may only be circumvented by a complete disassociation from modern conveniences: cash only; no social media; little to no internet use; ditch your smartphone; pay a &#8220;wipe my personal data&#8221; site to do whatever it is they do; etc.</p><h3>But what if we said there is a better alternative? </h3><p>One with ripple effects beyond our individual choice. The option we offer is simple: <strong>consumer rebellion</strong>. </p><p>Demand shapes policy. <strong><a href="https://youtu.be/L-aqEFJWe5k?si=CilL61u-rc5lpomG">Episode 6</a></strong> covers that at length. So if we put our consumer dollar toward a fairer, safer, better future, industry will respond in kind. It has to in order to survive. The beauty of this plan of action does not stop at our dollars spent, however. It is propelled by our social choices, too.</p><p>Tucker Garrison (a recurring guest this season) compared food to public education: just as we agree as a society that educating children is something worth funding publicly, we need to agree that feeding people healthy food is an essential part of a harmonious and free society, and prioritize it through policy.</p><p>Yesterday, we released episode 7 of The Agriculture Season. Perhaps we&#8217;ve become desensitized, perhaps your algorithm is not pushing that kind of content to you, perhaps greenwashing and really effective communication campaigns have effectively made most of us believe that there isn&#8217;t really an issue. Or, if there was, they&#8217;re on top of it with their &#8220;all natural&#8221; products on the shelves.&nbsp;</p><p>This episode is, instead, overflowing with ideas to make a difference and a plan to get us out of this mess! But how do they come to exist? A &#8216;desert&#8217; is a natural condition, whereas an area lacking access to food is anything BUT natural. The absence of healthy food in a neighborhood is not somehow inevitable or geological. Communities with limited access also face issues like food insecurity.</p><p>When we discuss <strong>food security</strong>, we must also consider food sovereignty, however. The idea that access to &#8216;food&#8217; alone is not enough. People should have democratic agency over what is grown, how it&#8217;s distributed, what it costs, and whether it reflects the identity of the people it serves.</p><h3>Our latest podcast episode dives into this uncomfortable topic.</h3><p>In Episode 5, <em><strong>Calories Aren&#8217;t Enough: Food Security vs Food Sovereignty</strong></em>, we plainly lay out these concepts and the answer to the initial inquiry by examining the intersection of agriculture and equity, how food systems operate at various scales, and &#8211; ultimately &#8211; how the design of our food systems creates inequity, waste and environmental harm.</p><p>Sure, waste within a system can be expected, even normal, but we argue that specific economic, political, geographic, and historical influences built the food world we live in.</p><p>The first half of the episode confronts uncomfortable truths, like:</p><ul><li><p><a href="https://www.unep.org/topics/food-systems/food-loss-and-waste">One third</a> of all the food produced on Earth never gets eaten;</p></li><li><p>Roughly <a href="https://www.unep.org/topics/food-systems/food-loss-and-waste">783 million people go to bed hungry</a>; and</p></li><li><p><a href="https://www.unep.org/topics/food-systems/food-loss-and-waste">One third</a> of humanity faces food insecurity.</p></li></ul><p>But, in accordance with the Hotel Earth 360&#176; <a href="https://hotelearth360.com/">mission</a>, we end the episode with a silver lining. It&#8217;s been talked about everywhere, but in case you&#8217;re lost: lets me catch you up. </p><h3>A brief overview:</h3><p>As we mentioned in <strong><a href="https://open.spotify.com/episode/35QFcL5LfWpSTckVjcXYRt?si=4d461864c41e40d6">Episode 2</a> </strong>of this season, the global agriculture industry is responsible for somewhere between 19-29% of global greenhouse gas emissions (yikes) and <a href="https://www.ipcc.ch/srccl/chapter/summary-for-policymakers/">meat/dairy production</a> makes up a large portion of that, particularly the greenhouse gas methane. Livestock (meat and dairy) is the heavyweight, accounting for <a href="https://www.unep.org/resources/report/global-methane-assessment-benefits-and-costs-mitigating-methane-emissions">32% of all human-caused methane</a> globally. </p><p>Let&#8217;s not beat around the bush: that&#8217;s a lot. </p><p>For our visual learners: If the global meat and dairy industry were a country, it would be the <a href="https://www.fao.org/3/i3437e/i3437e.pdf">3rd largest emitter in the world</a>, trailing only China and the U.S. In fact, the combined emissions of just the top 45 meat and dairy companies are higher than the entire reported emissions of Saudi Arabia&#8212;one of the world&#8217;s largest oil producers.  </p><p>THAT IS INSANE.</p><h3>And what about the ethics of it all? </h3><p>CAFOs (concentrated animal feeding operations) are industrial agricultural facilities that confine large numbers of animals&#8212;meat, dairy, or egg producers&#8212;in a small area. No vegetation. Before we continue with the very serious consequences of industrial agriculture, let us first say: we&#8217;re not here to villainize it wholesale &#8212; industrial agriculture has brought incredible advancements and allows us to provide large quantities of calories to the world.  </p><p>However, it has simultaneously led to the destruction of topsoil (the thing we need to grow food, literally), a significant decrease in our food&#8217;s nutritional value, the dependency on heavy chemicals, increased carbon emissions, deforestation&#8230; not to mention the bankruptcy of smallholder farms as agriculture monopolies quietly take over the entire industry. </p><h3>So, we ended up here.</h3><p>A food system capable of producing staggering quantities of calories, that simultaneously degrades the very land it depends on, concentrates power in fewer and fewer hands, and has left millions of people &#8211; particularly in lower-income communities &#8211; without reliable access to nutritious food.</p><p>That's the paradox of industrial agriculture.
